Slurry  is the  mixture of  milk  and  flour that  is blended together  until  smooth. Slurry   is used   as a  thickening agent in sauces and  gravies. It  is  called  slurry  because it  is a  mixture  of a liquid  and  a solid. This  solid layer  is  made up of   milk solid  and some  fat that  is often  forms  on the  surface  of the milk  during  heating.
